| The history of distillation in Mexico centers around
the native agave plant. The ancient Aztecs fermented its juice to produce
the alcoholic beverage “pulque” as far back as 200 AD. They
began distilling pulque around 1500, when mezcal wine was first consumed
in Mexico. The old process of making mezcal wine is still used today to
make Monte Alban Mezcal. |

Agave for Mezcal is grown in the State of Oaxaca in the
Southern part Mexico. Cultivated naturally without any fertilizer or insecticides
during its growing cycle, the plant is harvested at its ripe point. Once
the leaves are cut off, the stem of the plant is left clean and ready for
distillation. |
