Amaretto Florentine Cookies

Cookie
2/3 C. Butter
2 C. Uncooked Quick Oats
1 C. Sugar
2/3 C. All-Purpose Flour
½ C. Finely Chopped Almonds
¼ C. Corn Syrup
¼ C. Amaretto di Amore
½ Teaspoon Salt

Filling

3 Tablespoons Butter
¼ C. Amaretto di Amore
1-1/2 C. Semisweet Chocolate Chips

Cookie

Preheat oven to 375°F. Foil-line cookie sheets. In medium saucepan, melt butter. Remove from heat. Stir in quick oats, sugar, flour, almonds, corn syrup, ¼ c. Amaretto di Amore and salt. Drop by rounded teaspoonfuls 3 inches apart onto prepared cookie sheets; spread each to make thin. Bake 8-11 minutes, until golden. Cool completely on cookie sheets. Peel off foil. Spread filling on flat side of ½ the cookies. Top with remaining cookies. Makes 2-1/2 dozen.

Filling

In medium heavy gauge saucepan over low heat, melt butter with ¼ c. Amaretto di Amore. Remove from heat. Stir in chocolate chips. Cool to room temperature.

Creamy Laced Hot Chocolate

3 Tablespoons Sweet Ground Chocolate and Cocoa
3 Tablespoons Unsweetened Cocoa
2 C. Milk
¾ C. Marshmallow Cream
½ C. Amaretto di Amore

Toppings

Whipped cream, chocolate shavings, marshmallows.

Combine chocolate and cocoa and unsweetened cocoa in a small saucepan; stir well. Stir in milk; add marshmallow cream. Bring to a boil over medium-high heat, stirring constantly with a wire whisk until smooth. Remove from heat; stir in Amaretto di Amore. Pour into mugs; serve with desired toppings. Yield: 3 cups.

Di Amore Dream

1-1/2 OZ. Amaretto di Amore
¼ Oz. Boston Cream De Cacao
2 Oz. Orange Juice

Blend ingredients with two scoops of vanilla ice cream; serve in parfait glass.
